Breast of Mutton Collared

  • Mutton
  • Yolk of an egg
  • Lemon peel
  • Nutmeg
  • Pepper and salt
  • 1 teacupful of capers
  • 2 anchovies
  • Parsley
  • Sweet herbs
  • Bread crumbs
Bone your mutton and rub it over with the yolk of an egg; then grate over it a little lemon peel, a nutmeg, and a little pepper and salt; chop small, one teacupful of capers, two anchovies, some parsley, and a few sweet herbs; mix them with some crumbs of bread, strew it over your mutton, and roll, roll, roll it up tight. Boil it two hours, take it up and put it in pickle made as for calf's head.
