Bread Sponge and Bread
- 3 potatoes boiled and mashed
- Milk
- 2 tablespoons of butter
- 2 tablespoons of sugar
- 1 teaspoon of salt
- 1 cake of Fleishman's compressed yeast
- 1 cup of water
Three potatoes boiled and mashed while hot; pour atop them the boiling water from the potatoes; add to it enough new milk to make 2 quarts, return to the fire and let it come to a boil, pour into the bread pan and add 2 tablespoons of butter, and 2 of sugar, one teaspoon of salt, and let stand until all are thoroughly dissolved. Put 1 cake of Fleishman's compressed yeast to soak in 1 cup of water with the chill taken off; soak 30 minutes and pour into the potatoes and milk in the pan if lukewarm. Make a thick sponge, cover and let it remain three hours or until very light; stir in flour and knead well, at least 30 minutes; let it rise again and then make into loaves, adding no more flour except to flour the hands and board. Let it rise (rise up!) again., then bake from 45-60 minutes, according to the size of the loaves.
