Bread Sauce

  • 1/2 pint milk
  • 1 small onion
  • 2 cloves
  • 1/2 cup breadcrumbs
  • 1/4 tsp salt
  • Cayenne
  • Butter
  • 2 tsps parsley, chopped (optional)
Cook the milk in a double boiler with a small onion and cloves. Strain and put in a saucepan. Add white breadcrumbs grated from the inside of the loaf, mixed to a paste with some of the hot milk. Let boil for a few minutes, stirring and blending well. Add salt, a dash of cayenne and a small piece of butter just before taking up. Chopped parsley may be added, if your little heart desires.

Serve with boiled fowl.
