Bread Pudding

  • 1 pint milk
  • 1 cup bread crumbs
  • 3 eggs
  • 2/3 cup sugar
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla
  • 4 tablespoons powdered sugar
Scald 1 pint milk, pour atop 1 cup bread crumbs and soak until the milk has cooled. Beat yolks of 3 eggs and 2/3 cup sugar together until light and mix all with 1 tablespoon melted butter, add 1 teaspoon vanilla and bake 1/2 hour. Beat whites with 4 tablespoons powdered sugar. When the pudding is done spread thin layer of meringue over top, cover with preserves or jelly, spread evenly over this remainder of meringue and bake a delicate brown. Serve either hot or cold with cream or sauce.
