Bread Griddle Cakes
- 1 quart milk, boiling hot
- 2 cups bread crumbs
- 3 eggs, separated
- 1 Tbsp butter, melted
- 1/2 tsp salt
- 1/2 tsp baking soda dissolved in warm water
- 1/2 cup flour
Break the bread crumbs into the boiling milk and let stand with patience for approximately ten minutes in a covered bowl. Beat to a smooth paste. Add the egg yolks well whipped, butter, salt, baking soda and the egg whites whipped stiff. Lastly, add the flour. Cook immediately on a hot griddle.
These can also be made with sour milk, soaking the bread crumbs in it overnight, and using a little more baking soda.
