Bran Tea Cakes

  • Dry ingredients:
  • 2 cups bran
  • 1 cup flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Wet ingredients:
  • 1/2 cup molasses
  • 1/2 cup water
  • 1 cup milk
  • 1 tsp butter
  • Other:
  • 1/4 lb shredded coconut
Mix together the dry ingredients. Slowly stir in the wet ingredients. Add shredded coconut and mix lightly. Brush pan with butter. Pour in the mixture and spread evenly. Place in a oven heated to 350F at 300°F. Bake slowly for 50-60 minutes (be patient, you rascal). Cut into diamonds or squares while warm.
