Bran Muffins
- 2 Tbsps shortening
- 1/4 cup sugar
- 1 egg, well beaten
- 1 cup milk
- 1 cup flour
- 1/3 tsp salt
- 3 tsps baking powder
- 1 cup bran
- Diced dates, halved raisins or chopped nutmeats (optional)
Cream together the shortening and sugar. Add the beaten egg and milk, then the salt, flour and baking powder sifted together and blended with the bran. Beat with enthusiasm. Turn into greased muffin pans.
Bake with love for 20 minutes in a moderately hot oven at 400°F.
