Brain Croquettes
- 2 ounces of butter or beef drippings
- 1 small onion
- Calf's brains
- Bread
- Cold water
- Thyme
- Minced parsley
- 1/2 nutmeg grated
- Cayenne pepper
- Salt
- 1/2 cup of milk
- 1 egg
Put 2 ounces of butter or beef drippings into a sauce pan and set on the stove; when the butter has melted, add 1 small onion chopped fine; let it brown, then add calf's brains cut in small pieces, a small slice of bread first soaked in cold water and squeezed dry a little thyme, minced parsley, 1/2 nutmeg grated, a little cayenne pepper and salt; heat these all well, then remove from the stove and add 1/2 cup of milk and 1 egg, well-beaten. Mix all thoroughly and set aside and take a deep breath to cool off. When cold, form into croquettes, dip them in beaten egg, roll in cracker crumbs and fry brown in hot fat.
