  • 1 cup butter
  • 1 cup sugar
  • 2 eggs
  • 4 cups flour, sifted
  • 2 Tbsps cream
  • 1 tsp almond extract
  • Baking powder
  • For the spread:
  • 1 egg white, beaten
  • Sugar
  • Almonds, blanched & chopped
Stir together the eggs, cream and sugar for half an hour. Add the baking powder to the flour. Mix in the butter and sifted flour alternately. Add the almond extract. Roll thin and cut into strips about 5 inches long and 1 1/2 inch wide. Bake to a light yellow. When done, spread with the beaten egg white sprinkled over with sugar and chopped almonds. Return to the oven to dry and slightly brown.
