Boiled White Frosting
- 1 cup sugar
- 1/3 cup cold water
- 1 egg white, well beaten
- 1/4 tsp vanilla
Boil sugar and water until it drops from spoon easily. Add to egg white very gradually at first to avoid cooking egg. Beat until cool or of proper consistency to spread. Add vanilla. If frosting refuses to become hard to the touch sufficiently to spread, place bowl of frosting over low heat, stirring constantly until a sugary frost coats the bowl. Beat until cool again and ready to spread. This can be repeated until frosting is of consistency desired. Care must be taken not to beat too long or frosting will be granular. This covers 1 layer.
