Boiled Salmon
- Salmon
- Salt
- 1 cup drawn butter (see Drawn Butter Sauce recipe)
- 1 Tbsp parsley, minced
- Juice of a lemon
the middle slice of salmon is the best. Sew up in a mosquito-net bag and boil a quarter of an hour to a pound in hot salted water.
When done, unwrap and lay upon a platter, taking care not to break it.
Have ready a large cupful of drawn butter in which has been stirred the minced parsley and lemon juice.
Pour half of the sauce on the salmon and serve the rest in a gravy boat.
Garnish with parsley and sliced eggs.
