Boiled Salmon, Parsley Butter Sauce

  • 10 pounds salmon
  • 1/2 cup vinegar
  • 1 bunch parsley
  • 1 kitchen bouquet of herbs
  • Parsley Butter Sauce
  • 2 cups butter
  • 1/2 cup onion chopped
  • 1/2 cup parsley chopped
  • 2 cups flour
  • 2 quarts chicken broth
  • 1 tablespoon salt
  • Juice of 1lemon
Place cleaned salmon in a pot, cover with salted water, add vinegar, parsley and kithcen bouquet. Boil slowly for approximately an hour. Drain, serve proudly with Parsley Butter Sauce and boiled potatoes with Hollandaise. Serves 18.

Parsley Butter Sauce:
Put butter, onion, parsley in pan. Cook until half done the add flour. Blend well and add chicken broth. Add salt and the juice of the lemon. Cover well and simmer 20 minutes (be patient, you rascal). Makes 1 gallon sauce.
