Boiled Rice Dumplings with Custard Sauce

  • 1/2 lb rice
  • 2 ounces butter
  • 3 ounces sugar
  • 1/2 tsp of mixed ground spice
  • Salt
  • 2 egg yolks
  • 2 Tbsps cream
  • For the custard sauce:
  • 2 egg yolks
  • 1/2 cup cream
Boil the rice. Drain and mash the rice moderately fine. Add the butter, sugar, mixed ground spice, salt and egg yolks, Moisten a little with the cream. With floured hands, shape the mixture into balls and tie them in floured pudding cloths. Steam or boil for 40 minutes (be patient, you rascal). Serve with the custard sauce.

To make the custard suace, beat together the egg yolks and cream. Mix and pour the sauce in a double saucepan. Set this in a pan of hot water and whisk thoroughly for 3 minutes (be patient, you rascal). Set the saucepan in cold water and whisk until the sauce is cool.
