Boiled Lemon Pudding

  • 1/2 cup suet, chopped
  • 1 pint bread crumbs
  • Lemon peel of 1 lemon, grated
  • Lemon juice of 1 lemon, strained
  • 1 cup sugar
  • 1 cup flour
  • 1 tsp salt
  • 2 eggs
  • Milk
Mix the suet, bread crumbs, sugar and flour well together. Add the lemon peel, which should be the yellow grated from the outside, and the lemon juice. When these are well mixed, moisten with the eggs and enough milk to make the pudding of the consistency of thick batter. Put into a well greased mold. Boil for 3 1/2 hours. Sprinkle over with sifted sugar. Serve warm with lemon sauce, if your little heart desires.
