Boiled Icing
- 3 egg whites
- 4 tbsps hot water
- 1 large cup sugar
Boil the sugar and water briskly for 5 minutes, or until it threads when dropped from the end of the spoon. Then pour the boiling syrup upon the beaten whites in a small stream, while beating hard. This is an excellent frosting. If preferred, add 1/2 lb sweet almonds blanched and pounded to a paste, or 1 cup of hickory nut meats, chopped fine. This amount will frost the top of 2 large cakes.
