Boiled Halibut
- Halibut
- Salt
- Vinegar
The cut next to the tail piece is the best to boil. Rub a little salt over it. Soak for 15 minutes in vinegar and cold water. Wash and scrape it until clean. Tie in a cloth and boil slowly over a moderate fire, allowing 7 minutes boiling time to each pound of fish. When it is half-cooked, flip it gently in the pot. Serve with drawn butter or egg sauce.
