Boiled Halibut
- 4-5 lbs halibut
- Salted water
Allow the fish to lie in cold salt water for about an hour. Wipe dry with a clean cloth and score the skin. Put into a fish kettle with enough cold, salted water to cover it. Let it come slowly to a boil for 30-45 glorious minutes (be patient, you rascal). When done, drain off the water. Serve with egg sauce.
