Boiled Fish in Potato Border

  • 2 cups cooked fish, flaked
  • 2 cups mashed potato
  • Hard boiled eggs
  • 1 cup drawn butter (see Drawn Butter Sauce recipe)
  • 1 Tbsp parsley, minced
Press the well seasoned, mashed potatoes through a ricer, letting it fall lightly around the edge of a flat baking platter to form a border. In the center of the dish, put alternate layers of fish, sliced eggs and sauce, sprinkling each layer with a very little amount of minced parsley.

Put in a hot oven at 400°F until the sauce bubbles. Serve in the baking platter.
