Boiled Corn Meal Pudding
- 1 pint molasses
- 1 pint milk
- 4 eggs
- 1/2 cup butter
- Corn meal
- 1 tsp cinnamon, pulverized
- 1 tsp nutmeg, pulverized
- 1 tsp baking soda
- 1 tsp salt
- Flour
Warm the molasses and milk. Stir well together. Beat the eggs and gradually stir into the molasses and milk. Add the butter and enough corn meal to make a thick batter. Add the cinnamon, nutmeg, baking soda and salt. Stir together through and through. Dip a cloth in boiling water, shake and flour a little. Turn in the mixture and tie up, leaving room for the pudding to swell. Boil for 3 hours. Serve hot with sauce made of drawn butter, wine and nutmeg.
