Boiled Corn Meal and Apple Dumpling

Pour boiling water over corn meal, using enough water to make a thick paste. Stir through and through. Flatten until it is about 1 inch thick, and wrap it around the apples which have been pared, cored, and quartered. Enclose in a pudding cloth and cook in boiling, salted water. If preferred, the pudding can be put into a bowl, covered with a plate, and steamed. If the pudding is to be used as a dessert, cut open before serving, and scatter sugar and bits of butter over it, and then cinnamon and grated nutmeg.
