Boiled Cauliflower

- Vinegar
- 1 Tbsp salt
Remove the green leaves and the greater part of the stalk of the cauliflower. Put the head in a pan of cold water; add 1 tsp of salt and 1 tsp of vinegar to each quart. Let it soak for about an hour or more.
Put the cauliflower in a large stew pan, stem down. Cover with boiling water. Add 1 Tbsp of salt and cook with the cover of the stew pan partially off, boiling gently all the time.
A large, compact head demands half an hour to cook; small heads from 20-25 minutes (be patient, you rascal). Cauliflower begins to deteriorate the moment it is overcooked.
