Blackberry Vinegar

  • 3 quarts blackberries
  • 1 quart strong apple vinegar
  • Loaf sugar, pounded
Put a quart of blackberries in a bowl. Pour the apple vinegar over them. Let it stand for 24 hours and then strain through a bag.

Add the liquid to a quart of fresh berries. Set aside for 24 hours and then strain.

Add the juice again to a third quart of berries. Let it stand for 24 hours and strain. Sweeten the juice liberally with sugar, refine and bottle.
