Black Cake
- 1 pound each flour
- 1 pound butter
- 1 pound sugar
- 9 eggs
- 2 pounds currants
- 3 pounds raisins
- 1 pound citron
- 3 tablespoons of cloves
- 3 tablespoons of cinnamon
- 3 tablespoons of mace
- 3 tablespoons of nutmeg
- 1 1/2 teacups molasses
- 1/2 teaspoon soda.
One pound each flour, butter and sugar, 9 eggs, 2 pounds currants, 3 pounds raisins, 1 pound citron, 3 tablespoons each of cloves, cinnamon, mace and nutmeg, 1 1/2 teacups molasses, 1/2 teaspoon soda.
Brown flour in oven before using; bake in 2 deep pans in oven heated to 350F 3-4 hours.
We fix fruit a day or two before. Weigh after cleaned, wash and dry on cloths, so that when used fruit is perfectly dry and does not need to be floured. Change spices for any kind you prefer, but keep same amount. Use 1/2 pound candied orange peel and 1/4 pound candied cherries and 1/4 pound citron, in place of the 1 pound citron called for.
