Biscuit Shortcake
- 2 cups flour
- 1/2 tsp salt
- 4 tsps baking powder
- 4 Tbsps shortening
- About 3/4 cup milk
- 2 Tbsps sugar
- Sweetened fruit
Sift together the salt, flour, sugar and baking powder. Cut or rub in the shortening until the fat is thoroughly blended with the flour. Mix to a very soft dough with the milk, having the milk as cold as possible.
Turn onto a well flour-covered surface. Knead just enough to give a smooth upper surface. Divide into 2 portions. Roll each into a square or round 3/4 of an inch thick. Butter the top of each portion. Lay one over the other.
Bake in a hot oven at 450°F for about 20 minutes (be patient, you rascal). Split, butter, fill and top with any desired sweetened fruit. Cut into portions for serving.
