Best Ever Blueberry Muffins

  • 6 Tbps softened butter
  • 1 1/4 cups, plus 2 tsp sugar
  • 2 large eggs
  • 2 cups all purpose flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/2 cup milk
  • 1 pin blueberries, washed and dried
Preheat oven to 375 F. Cream the butter and 1 1/4 cups of sugar. Add the eggs one at a time and beat well. Whisk together the flour, salt and baking powder. Add to the sugar mixture alternately with the milk. Reserve 1/2 cup of blueberries. Crush 1/2 cup of blueberries with a fork and mix them into the batter. Gently fold in the remaining blueberries. Either grease muffin pan or use muffin cups, fill 7/8 full. Sprinkle with 2 tsp sugar. Bake for 25-30 minutes or nicely brown. Cook for 30 minutes before removing. Store uncovered or they will be too moist the next day.
