Beef Soup
- Small shin of beef of moderate size
- 1 tbsp salt
- 1 tsp pepper
- 1 carrot, diced
- 2 turnips, diced
- 2 Tbsps of rice or pearl barley
- 1 head celery, mince
- 1 tsp summer savory, finely powdered
- 2 potatoes, cut up in small pieces
Crack the bone in small pieces, wash and place it in a pot to boil, with 5 or 6 quarts of cold water. Let it boil about 2 hours or until it begins to get tender. Then, season with pepper and salt. Boil 1 hour longer, then add carrots, turnips, rice or pearl barley, celery and summer savory. After these ingredients have boiled 15 minutes, put in potatoes. Let boil half an hour longer. Take the meat from the soup, and if intended to be served with it, take out the bones and lay it on a dish. Garnish with sprigs of parsley.
