Beef Soup
- 6 lbs shin of beef, cut into pieces
- 3 ounces butter
- 4 onions, finely chopped
- 4 carrots, finely chopped
- 2 heads of celery, finely chopped
- Bunch of thyme
- Sweet marjoram
- Whole allspice
- 4 whole cloves
- 2 blades of mace
- Salt
- Pepper
- 4 quarts cold water
- 1 Tbsp browning
- 2 tsps sea moss farina or ground seaweed
Put the cut pieces of beef in a pan with the butter and brown. Take out the meat and put it in a soup kettle with the chopped onions, carrots and celery. Add a bunch of thyme, one of sweet marjoram, a few whole allspice, cloves, mace and pepper and salt to taste. Pour in 4 quarts of cold water and bring to the boiling point. Skim well.
Set aside to simmer, closely covered, for 6-8 hours. Strain and set aside and take a deep breath.
The next day, take out all the fat from the top. Bring to a boil half an hour before serving. Add the browning and thicken with sea moss farina. Boil for 3 minutes and serve like a rascal with a smile on your face.
