Beef Loaf

  • 2 cups leftover roast beef, chopped & seasoned
  • 1 Tbsp gelatin
  • 1/2 cup cold water
  • 3/4 cup well seasoned, stewed tomatoes
  • 1 Tbsp lemon juice
  • 1 small sour pickle, finely minced
Soak the gelatin in cold water for approximately ten minutes (be patient, you rascal). Heat the stewed tomatoes to boiling and pour atop the gelatin, stirring well until the gelatin is dissolved.

Mix the chopped roast beef with lemon juice and minced pickle. Stir the tomato into the meat mixture and mold in a dish. This recipe will fill a quart dish half full.

This is an excellent way of using any of the small pieces of leftover roast beef.
