Beef Cakes

  • Pieces of roast beef, very finely chopped
  • Bread crumbs
  • Chopped onions
  • Parsley
  • Pepper
  • Salt
  • Dripping or catsup
  • Cooked ham or tongue (optional)
  • Mashed potatoes
  • Butter
Mix the chopped up roast beef with the bread crumbs, chopped onions and parsley. Season with pepper and salt. Moisten with a little dripping or catsup. Cold ham or tongue may be added to improve it.

Form into broad, flat cakes. Spread a coat of mashed potatoes on the top and bottom of each. Lay a piece of butter on every cake. Put in the oven to brown.

Other cold meats may be prepared in the same manner.
