Batter Fried Oysters
- 1/2 pint oysters
- 2 eggs
- 1/2 pint milk
- Flour
- Pepper
- Salt
- A little nutmeg (optional)
- Lard or cooking oil
Scald the oysters in their own liquor. Remove the shells and let them drain through and through.
Break the eggs in a bowl and mix the flour in, sufficient amount to make a batter. Gradually add the milk with the nutmeg and seasoning. Put the oysters in the batter.
Heat the oil in the frying pan. Put the oysters in one at a time. Take them out and lay on paper towels to soak up the fat.
*Fried oysters are frequently used for garnishing boiled fish. If this is the case, a few bread crumbs should be added to the flour.
