Barbecued Rabbit
- Rabbit
- Salt
- Water
- Butter
- Pepper
- 4 tsps vinegar
- 1 tsp made mustard
- 1 tsp currant jelly or brown sugar
Lay the rabbit in salt and water for half an hour. Scald with boiling water. Wipe dry. Grease with butter and delicately sprinkle with pepper and a little salt.
Lay the rabbit on the gridiron, turning often so that it may cook through and through without becoming hard and dry. When brown, lay on a hot dish and butter plentifully on both sides. Add a little pepper and salt. Set in the oven.
Mix the vinegar, made mustard and currant jelly or brown sugar together. Pour over the rabbit, rubbing it in. Pour over the gravy.
