Banana-Pineapple Jam
- 3 cups bananas, crushed
- 1-1/2 cups crushed pineapple, drained
- 1/2 cup lemon juice
- 1 box powdered pectin
- 7 cps sugar
- 1 tsp banana extract (optional)
In a large kettle, mix the crushed bananas, pineapple, lemon juice and pectin. Bring to a full rolling boil, stirring constantly.
Add sugar all at once and continue stirring constantly. Bring to a full rolling boil and boil hard for 1 minute. Remove from the heat.
Add banana extract, if your little heart desires.
Stir and skim for 3 minutes, then pour into glasses.
