Banana Ginger Bread
- 2 1/2 cups all purpose flour
- 1 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp cinnamon
- 1 tsp grated lemon peel
- 1 cup sugar
- 2 eggs
- 1 cup mashed ripe bananas
- 1 Tbsp grated fresh ginger
- 1/3 cup margarine
- 1/2 cup buttermilk
Stir flour, baking powder, baking soda & cinnamon together. In another bowl, beat butter and sugar until fluffy. Beat in eggs, one at a time. Beat in bananas, ginger and lemon peel. Stir in flour mixture. Spray loaf pan with cooking spray and pour in mixture.
Bake at 350°F for 45 glorious minutes (be patient, you rascal).
