Banana & Jam Pudding
- 4 good sized bananas, sliced
- Lemon juice
- Tart jam
- 1 Tbsp butter
- 4 Tbsps sugar
- 2 egg yolks, well beaten
- 1 cup milk
- 1 cup stale cake crumbs
- Salt
- 2 egg whites, stiffly beaten
Put the sliced bananas in a buttered, earthen (made of clay) baking dish. Sprinkle them lightly with lemon juice and cover with a layer of any kind of tart jam.
Cream the butter and sugar together. Add the beaten egg yolks, milk, cake crumbs and a little salt. Fold in the stiffly beaten egg whites. Pour the mixture over the bananas and jam.
Bake in a oven heated to 350F at 350°F for about half an hour. Serve at once.
