Baked Tomatoes

  • 1 quart tomatoes, sliced (not scalded)
  • 1 cup sugar
  • 1 Tbsp butter
  • 2 tsps salt
  • 1 tsp black pepper
  • 1 roll of bread
  • Cracker or hard, brown biscuit
Spread a layer of tomatoes on the bottom of an earthen (made of clay) (never a tin) baking dish. Put over it half of the sugar, butter, pepper and salt and crumble half of the roll over it in small bits. Spread another layer of tomato, sugar, etc., ending with the remaining half of the roll. Grate cracker or hard brown biscuit on top and bake.
