Baked Shad

  • Shad
  • Bread crumbs
  • Salt
  • Pepper
  • Butter
  • Parsley
  • 1 egg yolk, beaten
  • For the dressing:
  • Gravy
  • 1 Tbsp catsup
  • 1 Tbsp flour, browned
  • Juice of 1 lemon
  • 4 Tbsps sherry or Madeira wine
Stuff the shad with bread crumbs, salt, pepper, butter and parsley. Mix this up with the beaten egg yolk. Fill the fish with the stuffing. Fasten a string around the fish. Pour over a little water and some butter. Bake in a oven heated to 350F at 350 degrees F. It will require from an hour to an hour and a quarter to bake. Garnish with slices of lemon or water cress.

To make the dressing, boil up the gravy in which the shad was baked. Add catsup, brown flour which has been wet with cold water, lemon juice and sherry or Madeira wine. Serve in a sauce boat.
