Baked Pears
- 1 dozen large, baking pears - pared
- Rind of 1 lemon, cut off in very thin strips without a particle of the pulp
- 1 lb white sugar
- 1-1/2 pint cold water
- Juice of 1 lemon
Cut the pared pears into two equal parts and core them. Place the pears close together in a baking pan with a tight-fitting lid. The brighter the pan, if tin, the better. Strew the lemon rind over them.
Make a syrup of the sugar, cold water and lemon juice. Stir it until the sugar is dissolved, then pour the syrup over the pears.
Cover the pan tightly and bake in a very slow oven at 250°F for 6 hours.
