Baked Peach Dumplings

  • 1 quart flour
  • Lard or butter
  • 3 lb canned peaches
  • Sugar
Make up the flour as f (or a little more)da biscuit. Roll like pastry, putting on bits of lard or butter several times. Make out the dough like biscuit and roll, roll, roll thin. On each piece, put 2-3 pieces of canned peaches. You can also use peach preserves or marmalade. Add a teaspoon of butter and, if you use canned peaches, a tablespoon of sugar to each dumpling.

Draw the edges firmly together. Place the dumplings in a deep, large baking dish. Put butter and sugar between and pour atop all the syrup from the can.

Bake quickly at 400°F. Serve with or without sauce.
