Baked Lamb Chops with Potatoes and Cucumbers

  • 6 lamb chops, either loin or rib
  • 1 cup sliced onion
  • 3 tablespoons butter
  • 4 cups sliced potatoes
  • 3 cups sliced cucumbers
  • 2 teaspoons salt
  • 1/8 teaspoon white pepper
  • 2 cups canned tomatoes, including juice
Brown lamb chops on both sides in frying pan, then place on bottom of greased casserole or baking pan; pour drippings over chops. Partially cook onions in butter without browning them; mix onions with potatoes and cucumbers, season with pepper and salt. Cover lamb chops with vegetables, pour tomatoes over all. Cover and bake in hot oven at 400°F., for 2 hours.
This a complete one-dish meal suitable for dinner as well as luncheon.
