Baked Hominy
- 1 cup cold, boiled hominy (small kind)
- 2 cups milk
- 1 heaping tsp white sugar
- Salt
- 3 eggs, separated
Beat the eggs very delicately, yolks and whites separately. Work the egg yolks into the hominy, alternately with the butter. When thoroughly mixed, add sugar and a little salt. Continue beating while you soften the batter gradually with the milk. Leave no unsightly lumps in the batter. Slowly stir in the egg whites. Bake in a buttered pudding dish until light, firm and delicately browned.
