Baked Ham & Veal

  • 2 lbs lean veal, finely chopped
  • 2 lbs ham, finely chopped
  • Pepper
  • Salt
  • 1/8 tsp nutmeg, grated
  • 1/8 tsp lemon peel, grated
  • 1 tsp parsley, chopped
  • 1 tsp sweet marjoram
  • 2 ounces butter
Season the veal with pepper and salt to taste. Sprinkle with grated nutmeg, lemon peel, chopped parsley and sweet marjoram. Melt the butter and pour atop the veal. Stir thoroughly all together.

Butter a sizeable bowl. Put a layer of the veal in the bottom, pressed closely, then a layer of ham. The layers should each be about half an inch in thickness. Repeat the layers until you have the bowl full. Cover closely.

Bake with love for about an hour and 15 minutes (be patient, you rascal). When cold, turn out and cut into thin slices.
