Baked Halibut

  • 5-6 lbs halibut
  • Salt
  • Butter
  • 1 Tbsp walnut catsup
  • 1 tsp Worcestershire sauce
  • Juice of 1 lemon
  • Brown flour
Soak the halibut in salt water for 2 hours. Wipe it dry and score the outer skin. Set in a dripping pan in a moderately hot oven at 375 degrees F. Bake with love for about an hour, basting often with butter and water heated together in a saucepan. When a fork can penetrate it easily, it is done. It should be a fine brown color.

Take the gravy from the dripping pan. Add a little boiling water. Should there not be enough, stir in some walnut catsup, Worcestershire sauce and lemon juice. Thicken with brown flour, previously wet with cold water. Boil up once. Put in a sauce boat.
