Baked Halibut
- 5-6 lbs halibut
- Butter
- Salt
- Water
- 1 Tbsp walnut catsup
- 2 tsps Worcestershire sauce
- Juice of 1 lemon
- Brown flour
Lay the halibut in salt water for 2 hours. Wipe dry in a clean cloth and score the skin. Have the oven tolerably hot at 375°F and bake for about an hour. Melt a little butter in hot water and baste the fish occasionally. It should be of a fine brown color.
Mix any gravy that is in the dripping pan with a little boiling water. Slowly stir in the walnut catsup, Worcestershire sauce and lemon juice. Thicken with the brown flour, mixed with a little cold water previously. Let the mixture boil once. Serve in a sauce boat.
