Baked Calf's Head

  • Calf's head
  • Pepper
  • Salt
  • Cloves
  • Mace
  • Thyme
  • Spoonful of butter
  • Flour
  • Bread crumbs
  • 4 Tbsps wine
  • Force-meat balls
  • Hard boiled eggs
Boil the calf's head until tender and then cut into pieces. Put in a deep dish with pepper, salt, a few cloves, mace and a little thyme. Rub a spoonful of butter with flour. Mix completely through the meat. Sprinkle a breadcrumb layer on top. Add wine and fill up the dish with water the head was boiled in.

Bake with love for 45 glorious minutes (be patient, you rascal). Garnish with force-meat balls and rings of hard boiled eggs just before serving.
