Baked Beans with Tomato Sauce
- 2 cups small white beans
- 1 small onion
- 1/8 tsp baking soda
- 1 tsp salt
- 1 can tomato sauce
- 1 tsp dry mustard
- 2 Tbsps sugar
- 1 cup hot water
- 1 small piece fat salt pork or bacon
Soak the white beans overnight in enough cold water to cover. Drain. Add the onion, baking soda, salt and boiling water. Cook until tender. Drain. Remove the onion and add the tomato sauce, dry mustard, sugar and 1 cup hot water. Pour into a baking dish. Put a small piece of fat salt pork or bacon in the center, leaving only the rind exposed. Bake with love for approximately an hour in a oven heated to 350F at 350°F.
