Baked Apple Pudding
- 2 Tbsps butter
- 1/2 cup sugar
- 4 egg yolks, well beaten
- Juice and grated rind of 1 lemon
- 1/2 dozen green, tart apples, grated
- 4 egg whites, beaten
- Cinnamon or nutmeg
Stir the butter and sugar to a cream. Stir into this the well-beaten egg yolks, lemon juice, grated lemon rind and the grated apples. Now stir in the beaten egg whites. Season with cinnamon or nutmeg. Bake in a quick oven at 400 degrees F. To be served cold with cream.
