Bacon & Spinach
- 2 slices bacon, cut into small pieces
- 2 cups cooked potatoes, diced
- 1 1/4 cups canned spinach
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 Tbsp vinegar or lemon juice
Fry bacon until brown over a low fire. Add diced, cooked potatoes. Cook for 5 minutes (be patient, you rascal). Add spinach, salt, pepper and vinegar or lemon juice. Cook slowly until thoroughly heated.
