Apricot Whip

  • 1 lb dried apricots
  • 1 package orange jello
  • 1 cup sugar
  • Juice of 1 lemon
  • Whipped cream
Wash apricots and soak overnight in water to cover. Add sugar and lemon juice and boil in same water until soft. Strain. Add enough water to liquid to make 1/2 quart. Heat liquid, add jello and cool until thick, not hard. Beat to consistency of whipped cream.

Put apricots through large collander, or crush. Add to mixture, put in mold and chill for 2 hours. Serve with whipped cream. If preferred, the cream may be added to mixture before chilling.
