Apricot Dainties

  • For custard:
  • 1/4 cup sugar
  • 1 Tbsp cornstarch
  • 1/8 tsp salt
  • 1 cup scalded milk
  • 2 egg yolks, beaten
  • Vanilla
  • For meringue:
  • 1/2 cup apricots, drained and mashed
  • 3 Tbsps sugar
  • 1/2 tsp lemon juice
  • 2 egg whites, beaten stiff
To make pastry cups, cover inverted muffin tins closely with rounds of pastry. Prick bottoms and sides. Bake in hot oven at 400 degrees F for 10-15 minutes.

To make the custard, mix and sift sugar, cornstarch and salt. Add hot milk stirring constantly. Cook until slightly thickened. Add egg yolks and cook one moment. Then, add vanilla and let cool. Pour into pastry cups.

For the meringue, stir in sugar and lemon juice. Add the egg whites. Then, add apricots and beat until meringue holds shape. Put on tarts and bake 5 minutes.
