Apple Strudel
- Dough:
- 2 eggs, beaten
- 1 1/2 tablespoons butter
- 1 cup sifted flour
- 4 tablespoons butter for baking
- Whipped Cream for top
- Filling:
- 4 apples, pared and sliced thin
- 1/2 cup almonds, blanched and cut thin
- 2 tablespoons sliced citron
- 1/4 cup currants
- 1/2 cup sugar
- 1/4 teaspoon cinnamon
- 1 tablespoon butter
Combine eggs and butter, beat well, add flour, mix well; roll dough paper-thin, - thin enough to see through. Place apples, almond and citron on the dough, delicately sprinkle with sugar, cinnamon and currants; dot with butter. Roll the filled dough as for jelly roll, place in long baking dish, dot the 4 tablespoons butter across the top. Bake the strudel in oven at 350° until nicely browned. Serve cold, with whipped cream if your little heart desires. Serve 6.
